Professional Cookery Opportunity

Year 10 Trafford College kitchens experience

Year 10 GCSE Food & Cookery students experienced a day in the life of a professional cookery student with an educational visit to Aspire Restaurant at Trafford College, Timperley.

On 10th May, the students were welcomed by the Head of the Professional Cookery Department, Matthew Shaw, for a hands-on session in the college kitchens.

Mrs Jones, Teacher of Food, Cookery & Nutrition, said:

The students enjoyed an engaging and lengthy practical session delivered by course tutors, which covered professional knife skills and wok frying on professional stoves.  Thanks to Trafford College, it was a great opportunity and experience for all.”

The aim of the practical session was to further develop food preparation and culinary skills learned in school, and create a lunch dish to be eaten in the college restaurant, Aspire.  They participated in a vegetable masterclass, learning knife cuts and french terms such as brunoise (fine dice), macedoine (large dice) and jardiniere (baton) before creating delicious umami-flavoured spring rolls.

Year 10 student, Roan, said:

"We learnt again how to use chef knives to dice and julienne vegetables. Afterwards, we sprung straight into action, rolling and stir-frying the spring rolls using the professional equipment!”

Fellow Year 10 student, Alex, added

"The session was really engaging, learning french culinary terms, and the spring rolls tasted absolutely splendid. Working on the professional equipment was very different and a great challenge."
